Aisha Jackson just shared she was Daisy in the early readings of The Great Gatsby in 2022. She is now the 2nd replacement for the broadway production. Obviously, I was reminded of Stephanie J. Block’s history with Wicked. Eric Anderson was originally Harold Zidler before Danny Burstein joined Moulin Rouge for Boston. What are some other notable examples of this scenario?

A little different, but John Cameron Mitchell obviously created Hedwig off-Broadway and did the movie, but replaced when it went to Broadway.

When "Rent" was at the NYTW, Joanne was portrayed by Shelley Dickinson, and Angel was portrayed by Mark Setlock, both of whom later understudied those roles on Broadway.

While, not exactly what you are asking for, a fun bit of trivia is I remember hearing Julia Murney saying when it came down to the final casting for Elphaba, it was Idina, Julia Murney, Ana Gasteyer, and Stephanie J. Block. All four women would lead a production (Broadway, tour, Chicago), with Murney being the first Elphaba replacment on tour.
