Spamalot has been cut down to ninety minutes with no intermission, but John O'Hurley is a very funny King Arthur and there's quite a good supporting cast.
Jersey Boys has just opened (or may still be in previews), but it's full-length and has been getting pretty good reviews.
Mamma Mia! is also full-length, and has been running for five years, which, if anything, is a testament to its enjoyability.

It is also shortened to 90 minutes with no intermission. But, it does have a lot of flashy Vegas flair as well as the typical Broadway musical aspect as well.
It has fireworks and more visual technical stuff and the chandelier crashes after Point Of No Return. When the Phantom is taking Christine down to his lair for the final time (same spot as in the movie.)
It is doing well in Vegas. I haven't seen it but I have never been to Vegas so I couldn't see it. But, I have heard that it is well recommended.

Contrary to popular belief (and attesting to how well the cuts go over, I guess), Jersey Boys is not full-length, but still more enjoyable than when I saw the show on Broadway. :)

Depending on what your taste is you may also want to check out Bette or Cher. Clint Holmes is really good as well, and of course the Cirque shows rarely disappoint.
I was in Vegas last year and really enjoyed Ka at the MGM.
It is Cirque but with a narrative (well a token gesture towards one). As always very theatrical but the sets are astounding. They have a stage lift that defies description. Very very entertaining in an "Only in Vegas" way. Will definitely be never be seen anywhere else.
I was in Vegas a month ago and saw Love (Cirque du Soleil show built around Beatles music), Danny Gans, and Phantom. I enjoyed the edited version of Phantom more than the full-length version. I loved Love, it was my second time seeing it. I didn't care for Danny Gans.
The other Cirque show I really loved was KA. It is an amazing show. I feel you can't go wrong with Mamma Mia. I saw it in Vegas several years ago and it seemed just like it did when I saw it everywhere else. Of course, I love the show so that doesn't disappoint me.

Vegas is not really a good place to watch Broadway shows bec. its a condensed 90 minutes show. I would recommend watching Cirque de Soleil shows instead bec. the theaters are specifically built for the shows~ like aquatic stage ...etc.... but dont expect its has a great book~most of the spectacle does not have a story..hence the name!
If you have a full day to spare... I would recommend taking a day trip by bus trip to Grand Canyon (less than $100.00 including food~I think? its been a while) The bus will pick you up at 630 am at your hotel and will bring you back at 9pm...Its beautiful and at least you can say.. I have been there! and People all over the world go to see this...Its a very spiritual experience~you would realize how small we are in relation to the grand scheme of things!
PS Specially if youre getting sick & tired of all the fake facades and man made buildings.
I recommend "O" although you might not get seats if you are going next week. That is one Cirque show that tends to sell out in advance.
Zumanity has amazing dancing and you can usually find that at the discount both day of show.
Bette Midler or Cher would be great as well.

Le Reve is the best show I've seen in Vegas and simply one of the best shows I've ever seen anywhere. It was obviously inspired by O, but takes the concept a bit further. If I had only one choice of any show to see, I would try to make it Le Reve. Le Reve Review and Video Preview

I was a dresser for Clint's Just Another Man premiere at at the JBT. We'll see what happens. It was supposed to transfer last year, but it has MAJOR book problems, although some of the music is absolutely wonderful.
