Best Nights to See Stars on Broadway?

I'm heading to New York around the middle of July probably late in the week and the weekend to see colleges and see some shows. I'm hoping to see Dirty Rotten Scoundrels, SpamAlot, and maybe BKLYN (I know how much most of you love that show. lol!).

Before I shell out several hundred bucks for tickets I was just wondering if anyone could give me some advice on which performances would be most likely to feature the stars. (ie- John, Norbert, & Sherie in DRS, or Eden in BKLYN). I would guess Friday and Saturday nights, but what about weekdays and matinees?

Excluding the possibility of illness or personal issues, when would I have the best chance of seeing the stars? (I know that the understudies are probably amazing but I'd like to see the original casts.)
