very frustrating day here. The IT Department, Brilliance Division, completely replaced our servers last night. We can't log on, we've lost all of our bookmarks and any documents we worked on yesterday. Everything is hosed up and this is the big prep day for the Open House. I lost two hours of graphics and documents I worked on yesterday.

ps - I'm dealing with IT frustrations, too. I'm working from home today - because it's mostly a day of conference calls and I'll be less distracted here, plus I feel like I'm fighting off something, so staying put is the best idea for me. Anyway, for some reason, I can't access my files remotely today, and the helpdesk is trying to figure out why. Looks like something was deleted from the server but they don't know why. I'm trying not to think about the fact that it all could be lost.
Computers. Can't live with 'em, can't live without 'em...

I want to leave now! I need to go home and bake for Church. HC and I volunteered for this Sunday's coffee clutch after the service. He baked cookies yesterday and is making an apple tort while I'm at the dentist tomorrow. I'm baking a pumpkin creme bundt cake and a ricotta sweet pie. We even got baby pumpkins to put on the tables that the kids can take afterwards. No time to do any of this on Saturday being we have a pumpkin carving at my accountant's house in the afternoon and seeing CARRIE: The Musical in the evening. I need to lighten up my social calendar.
That's wonderfully exhausting.

Baking...hmmm...I have a couple boxes of Tastefully Simple Grandma's Apple cake, which tastes exactly like my Mom's apple cake, but a lot less annoying to make. Maybe I'll stop and pick up a couple apples after work.

HC picked up a Sugarfree Blueberry cake for us last night. I can't wait to try it! I resisted the temptation of having a piece before I went to bed. Another good tip: don't eat at least 3 hours before you go to bed.

Sour Cream Apple Pie
Makes one (10-inch) pie
Ingredientsadd to shopping list For crust
•1 3/4 cups all purpose flour
•1/4 cup sugar
•1 teaspoon cinnamon
•1/2 teaspoon salt
•1/2 cup plus 2 tablespoons (1 1/4 sticks) chilled butter
•1/4 cup ice water or cold apple cider
For filling
•8 McIntosh apples, peeled, cored, and sliced
•1 2/3 cups sour cream
•1 cup sugar
•1/3 cup all purpose flour
•1 egg
•2 teaspoons vanilla
•1/2 teaspoon salt
For topping
•1 cup chopped walnuts
•1/2 cup all purpose flour
•1/3 cup firmly packed brown sugar
•1/3 cup granulated sugar
•1 tablespoon cinnamon
•pinch of salt
•1/2 cup (1 stick) butter, room temperature
Preparation
Make crust:
Combine flour, sugar, cinnamon, and salt in medium bowl. Cut in butter using pastry blender or 2 knives until mixture resembles coarse meal. Add water and toss mixture gently with fork until evenly moistened. Gather gently into ball. Transfer to lightly floured board and roll into circle slightly larger than a deep 10-inch pie plate. Ease pastry into pan and flute a high edge. Set aside.
Make filling:
Preheat oven to 450°F. Combine apples, sour cream, sugar, flour, egg, vanilla, and salt in large bowl and mix well. Spoon into crust. Bake 10 minutes. Reduce oven temperature to 350°F and continue baking until filling is slightly puffed and golden brown, about 40 minutes. (If edges of crust begin to brown too quickly, cover with strips of aluminum foil.)
Make topping:
Meanwhile, combine walnuts, flour, sugars, cinnamon, and salt in medium bowl and mix well. Blend in butter until mixture is crumbly. Spoon over pie and bake 15 minutes longer.
