Can someone explain to me what it was about Joan that made her classy, and what it is about Kathy that makes her unclassy? I hear that criticism all the time and I'm just baffled. I feel like classy must mean something different than what I think it means.

I think ya'll are missing the stuff between the lines, here.
This is not about Kathy filling Joan's shoes, or the perception of Kathy "needing" to, or actually filling, Joan's shoes, either on the part of Kathy Griffin or the viewers.
This happened on the heels of the Giuliana Rancic SNAFU of making that stupid comment about Zendaya's hair and supposed "smell," at the Oscars, a "joke" which she reportedly made the camera crew record several times to get "just right" on camera, in order to keep the joke in the episode, and fully air. (Kelly Osborne quit after this protracted incident because even she has limits and knew it wasn't funny.)
The point is, I believe Kathy's quick departure has less to do with her style of humor--which is branded and known among any of her followers, including her haters, so, no surprise. She knows who she is and what she does, and wouldn't just up and quit if she felt she "sucked" or needed to refine her delivery. It has more to do with the fact that Giuliana Rancic is showing herself to be a vapid, insensitive jerk. She's also the managing editor of E! and has made them a boatload of money since she arrived, including the formation of "Fashion Police" from the get-go. So E! wasn't about to let that franchise go so easily. They probably still won't, unless Giuliana puts her foot in her mouth one more time and officially overstays her welcome. Kathy likely didn't want to work with her, the more she got to know her and her formula.
You've got your rich husband, rich career, and surrogate kid, Giuliana...just take your money and run before you keep sounding like a bigger jerk.
But Kathy Griffin couldn't just trash-talk a colleague like that. So, she made the classiest exit she could. I say, brava.

Here's how I see it. Whatever the real reason for Kathy quitting, she made a statement blaming it on the tone of the show, that it criticizes women's bodies too much. Really? She knew exactly what the show was about, and eagerly took over for her good friend Joan. Plus, for a woman who claims to take offense at the focus and judgment on women's bodies, she sure focused on her own body and face, having multiple plastic surgeries to attain that perfection which she has a problem with as being important and that is unattainable.
I think she's a hypocrite on those two counts and I dislike her intensely.

I don't doubt Kathy Griffin's longtime and current reverence for Joan Rivers (or for the celebrities and celebrity-friends she knows and uses in her act, who *know* what she does in her act), for a second, and I don't know you, but neither should you. Her affection for Rivers is years long and evident. We can't fathom what Joan really thought about being part of this show that she helped create, with Rancic and her beloved daughter. Doesn't matter; being the "face" of the show, she knew she was, and would forever be, much more of a focus than Rancic, and now that the revered Rivers is gone--2 popular personalities quitting in a matter of weeks? What's behind the curtain is really being revealed, that's all.

Dieting, having surgery, exercising, doing whatever to make your body look however you yourself want it to look (for whatever reason) isn't the same as telling others they need to or should- and it's certainly not the same as shaming people for looking a certain way.

That's so silly. Unless she's actively shaming other people for not getting surgery, that's like an overweight person feeling oppressed by an in-shape person who hasn't said anything to them about their weight, but just by dint of them being in-shape.

The show has not been axed yet, it probably will be. Kathy (who I normally like) is so full of rubbish though, her brand of humour is normally quite mean on other celebs, that was nothing to do with it. She knew she wasn't working out (she ain't a clue about fashion and her humour did not work with this show) and she knew she was gonna be canned, she simply got there first.

(And I still maintain this is less about Kathy Griffin's act, image, performance, personal beliefs and/or actions and more about Giuliana not being a nice person, but being a thin, made-up, Hollywood-y TV person. If Kathy Griffin came in, did 7 episodes, and left, it would be worthy of this type of criticism. But all-around nice-person and fairly-respectful-fashion-policer Kelly Osbourne left first, and it was not about "what you should and should not say about someone's clothing," or the personal style and surgery choices of those doing the critiquing. It was about being up-to-here with Giuliana's self-perception that she's funny and appropriate, which she has not been. Open your eyes, people.)

I don't agree at all with love puppy. I think Kathy quit because she saw the bad ratings of her hosting non-talent, and got the hell out. She's much more concerned with herself and her ratings than personalities of others on the panel.
. I don't like that woman and I think she's a phony hippocrate.

Yes, mostly. Joan made her surgeries the biggest part of her act and made more fun of herself than of anyone else. Hypocrite? Kathy is because she knew damn well what Fashion Police was about, and then complains about what it was about when she quit.
