Sarah comes back in act II during Sarah Brown Eyes. At least she did in the original; I never saw the revival. The first character that comes to my mind is Fraulein Kost in Cabaret who has a fairly prominent role in the first act but is never seen nor mentioned in the second.

Ulla in THE PRODUCERS

Ulla is in both acts, though she appears late in act 1.

Sarah appeared in Sarah Brown Eyes in both the original and revival of Ragtime. She also appears in the finale.

Since you didn't specify plays vs. musicals, I'll throw BAREFOOT IN THE PARK into the hat. The deliverman literally has one line: "Bloomingdale's!" Then he comes into the apartment out of breath (the joke being that they live in a 5-story walkup) and leaves, never to be seen again.

Major-General Stanley appears late in act 1 of Pirates of Penzance
Same for Charlotte in ALNM

When I see the phrase "the ____ estate", I imagine a vast mansion in the country full of monocled men and high-collared women receiving letters about productions across the country and doing spit-takes at whatever they contain. -Kad

Really Jimmy and Muzzy come in late in Act 1 of Millie. Jimmy has that brief street scene after the opening number and reappears very close to the end of Act 1. I remember chilling quite a bit backstage during Act 1

Yes, givesmevoice, I mean that Charlotte (like Major-General Stanley) doesn't enter until very late in the first act and is featured very heavily in the second. So she's not in most of act 1.

The Dentist in LITTLE SHOP

Andrea in ONCE ON THIS ISLAND, although if done correctly, the actress should be playing a storyteller for most of the show.

Oh, Thomas and Ann Putnam are only in Act I of THE CRUCIBLE, while Danforth and Hawthorne are only in Act II.

Charlie in Brigadoon. Has his two major songs in Act I and then besides being at attendance at his wedding, doesn't say a word for Act II. Jean (his bride) too for that matter.

Older Patrick in MAME only appears in the 2nd act, and Younger Patrick disappears when Older patrick shows up (obviously) so they both are technically only in one act each.

Does Mrs. Muller count in "DOUBT"? Even though there aren't two acts, she doesn't appear until late in the play and only for a short while.

The title character and Katisha in THE MIKADO - Act 2 only.

The latest appearing major character ever is probably Glinda in THE WIZ. In recent productions, the actrees doubles as Aunt Em.
