Which classic musicals do you think should be adapted for film again?
My list is:
Show Boat
South Pacific
Anything Goes
Kiss Me Kate
A Little Night Music
My Fair Lady

I think there was a subject on this within the past three weeks. I would not disagree with other of the lists above. Most of those listed either sucked or were so stage bound that I never even felt that I was watching a movie, so much as an NT Live production.
Also I assume you were referring to classic movie musicals, as every one listed has also been a movie.
I would add MAME and Man of La Mancha to those lists. And Oklahomaa, only if given a gritty interpretation like the recent revival; I don't need or even want a remake of the original movie, which IMO sucked like every other production of Oklahoma I have ever seen up until the Fisk production.

How exactly would you want to adapt them? Some things are classics for a reason. Do you mean like how there are multiple versions of Annie? How exactly would you change them?

^ Apparently Ryan Murphy is still at work on scripts for his CHORUS LINE miniseries. I fear the results will be as problematic as his HOLLYWOOD miniseries was-- great talents squandered on an unfortunate script.

And many that should be MADE.
As a Sondheimite, of course Follies tops the list (also the list of shows I'm most afraid of the adaptation). Also Merrily and a decent version of Little Night Music. And Assassins and Anyone Can Whistle, while I'm sittin' and wishin'.
Do we need full production of Applause, or is that TV capture enough (see also, Pacific Overtures)? What about the evergreen topic of Mame? (which should satisfy fans of the show, but also Lucy)
Any of the Kander and Ebb shows qualify? (I'd love to see Scottsboro Boys filmed)
I'd also love new versions of Guys and Dolls and South Pacific.

just a reminder that Follies is being made and Richard Linklater is filming Merrily We Roll Along over the next 20 years.
I really want a film adaptations of Sunday and Company, surprised talk never happened for Jake Gyllenhaal to star in Sunday after the revival.
as for the topic at hand, OP mentioned most of them that came to my mind: Show Boat and Anything Goes could be fun modern movies.

Yeah, the Ryan Murphy Follies is one that I'm soooo apprehensive about (I should just expect to be thrilled by some aspects but totally disappointed in others. And of course it won't totally work or realize its potential. It's Follies). And I forgot Linklatter's Merrily, but I'm likely to be UNDER the hills of tomorrow when it's ultimately released.
I'm happy to have the OBC video of Sunday, and although it's uneven, I love lots about the NPH Company - and I enjoy the 2005 revival video as well. (I'll take Raul over NPH). Of course another option is always appreciated, so it's not as it I'd say no to either of them. Or any of the others. (...though I'm not really eager for another Passion or Into the Woods for entirely different reasons)
I think that Pacific Overtures is under appreciated and would love to see a version of it, but the amazing original production is so hard to top, even in its sub-VHS video form.
I'd also enjoy a Ragtime film. And maybe a subversive-styled streaming video Urinetown.

Thanks for clearing that up (I must've conflated it with some other of the multitude of Ryan Murphy projects).
I enjoyed the NTlive Follies broadcast. As always, one has favorite versions of the songs and actors. While Imelda wasn't my favorite Sally, and I really think that Who's That Woman and Loveland were underpowered, the mood, pacing and spirit of the production certainly met my expectations. I'm hopeful. (Also dream of a Kelli O'Hara & Laura Benanti stage revival in a few years.)

Whoever remade Show Boat or South Pacific would be called racist; whoever remade My Fair Lady or Kiss Me, Kate would be called misogynist; Anything Goes would be called plotless.
God knows what violent changes they might make to escape the criticism.

I'd want a new adaptation of Show Boat to REALLY push the envelope, which means using the uncensored lyrics.
