Do you like any non-theatre music? There's not a lot of theatre stuff on itunes. Save some of them $ for when they release "See What I Wanna See" in March, sh-k-boom is on itunes.
Avenue Q!
The Producers (I would get OBC over the movie soundtrack)
King and I
How to Suceed in Buisness Without Really Trying
Once Upon A Matress
Caroline or Change (I've never actually heard it so I can't really recommend it...)

Get the Cabaret 1998 revival over the original (if it's on iTunes, that is).
The London "adult" Mary Popins (I actually have no idea if a recording is avaliable/avalialbe on i-tunes)
Broadway Legend Joined: 7/16/05
LaChuisa's The Wild Party, Caroline or Change, and Kiss of the spider woman
all 3 are necessities to my collection
Barnum
Follies- OBC
Cinderella-1957 tv soundtrack
Man of La mancha- revival
Miss Saigon
Delovely- soundtrack
Best Little Whorehouse in Texas- OBC

You want dark?
Sweeney Todd
Parade
West Side Story
They're all dark. If you want lighter I'd go with
Light in the Piazza
Millie
Spamalot is worth Sara Ramirez alone.

A few humble suggestions:
Kiss of the Spider Woman
Crazy for You (it's just fun)
Bombay Dreams (for something different)
Phantom
Hair
Avenue Q
Sweeney Todd (either the original or wait for the new recording)
Spamalot is humorous
And if you're looking for older recordings, try Evita
Spelling Bee is a great choice, too!

My suggestions:
Assassins (either one would be a great choice)
Ragtime
Cabaret (1998 Revival)
Jekyll & Hyde
Evita

Children of Eden
and Into the woods, get both originals, London and Broadway, the London has some awesome performers, and a few songs cut from the OBC.
Try buying other artists singing jazzed or original versions of songs. Ella Fitz, Billie Holiday, Sinatra, etc all have great covers, as do many other artists of other styles! Search for your favorite songs and see what covers there are!

Urinetown
I like Spamalot for good laughs.
Ugh...double post...

If you want to try some (slightly)lighter fare, perhaps some of the Jerry Herman canon: La Cage Aux Folles, Mame, Hello, Dolly!, or Mack and Mabel.
Sondheim's A Little Night Music and Merrily We Roll Along have some wonderful songs, too.
I have no idea if any of these are on itunes, though. Sorry.
