Thanks, Tink. I'm most worried about my sister - while it is hell for my niece, she is still young and will rebound eventually. My sister, on the other hand, has been through so much the last year dealing with my parents - this is just a bit too much for her. I've never heard her sound so defeated. I've always been the gloomy one - she's always been the perky one. My heart is breaking for her. For both of them.
Yes, your family definitely deserves some much needed breathing room from major life events.
I am going to have to go to my first funeral since Chris/My Uncle last year this week. A mentor of mine from my former job lost his battle with cancer this morning. He was such an incredible man, it is such a shame to lose him, but at least he is no longer suffering. It is strange that this will mark the fifth person lost from that company since I started their in 2003. All way before their time, but such is life I guess.

BWG, one of my daughters has a queso fundido obsession and has for years. That and dill pickles, which only last a few days in our house!

Ingredients
1 cup white wine
1/2 pound mozzarella cheese, grated
1/2 pound Monterey Jack, grated
1/2 pound goat cheese crumbled
2 poblano peppers, roasted, peeled, seeded and finely chopped
1/4 pound Spanish chorizo, grilled and finely diced
6 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper
Directions
Bring the wine to a simmer in a double boiler. Add the mozzarella and Jack cheese and stir until melted. Add the remaining ingredients and cook for 5 minutes. Place in a fondue pot and serve with flour tortillas and blue corn chips.
Brd, you're daughter could get seriously heavy from all that queso fundido. She should limit her intake.
