When I was teaching I used to do a fun lesson on writing fractured fairytales. Creative exercise... I still have copies of some of my favorites from the students!
I don't particularly like the Grimm variety. I feel they are well named.
I grew up with the Disney variety. While, I'm still not over the shooting of Bambi's mother, the Disney variety was more palatable for this kid.
The Disney ones were some of my favorites, too.
I also remember a collection of books that were fairytales and fables. One was Gateway to Storyland, which had childhood stories. There were two others, which had different levels of stories. There were three books in the series.
Some of my favorite stories and tales... I'll have to try to search for them.

My day has been pretty busy here at work, but things are winding down now. I enjoyed both the Grimm and Disney version of fairytales growing up. I also loved children's fantasy books like "The Phantom Tollboth" and anything by Roald Dahl ("Charlie and the Chocolate Factory", "James and the Giant Peach"...).
I loved the "The Phantom Tollbooth."
As a Classics major, I also tip my hat to Aesop and some of his fables.

Beatrix Potter anyone?
My earliest memories are of Beatrix Potter. My father used to read them to me from the books he had as a child.

I was thinking about my 'children's literature' project that I did when I was getting my teaching degree. An anthology of the best and most-loved children's books, stories, poetry, tales... It was a labor of love.
I need to read through it again and re-visit some of those stories.

Awwww....I've missed the Beatrix Potter chat. You're right, Addy, Hill Top is a beautiful place to visit. And Mr. McGregor's garden is set out EXACTLY like it is in 'The Tale Of Peter Rabbit' with the little spade and all. And, Cookie, Squirel Nutkin and Mrs Tiggywinkle are two of my favourites.
