Modern Major General is a great one and as cheesy as the film is I get a kick out of the lyric changes from The Pirate Movie.

"Call Back in the Morning" - LITTLE SHOP OF HORRORS
"I Ain't Down Yet" (the first part) - THE UNSINKABLE MOLLY BROWN
"Don't Let Me Go" (the bridge) - SHREK
"Folies Bergere" (Stephanie Necropholous' part) - NINE
"Benny's Dispatch" - IN THE HEIGHTS (for that matter, anything in the show that's rapped)
"The Morning Report" - THE LION KING
Both "Sitting Pretty" and "Money (Makes The World Go Around)" - CABARET (coinkydink. huh.)
And, YES, "The Brain" from Young Frankenstein does count. There are actually three patter sections: First is "His medulla oblongata," and the second is, "Even though I almost kneed him", and the third and most difficult (because of it being in 12/8 time) is "You can call me Copernicus, Keppler, and Newton."
For that matter, I don't think anyone has ever mentioned "King of Broadway" from THE PRODUCERS. 12 rhymes for "nights again" in 45 seconds or less, a la "Reviewing the Situation" from OLIVER!, written by Mel Brooks? SHEER GENIUS.
