Stunt casting refers to someone being cast in a role they're not right for in any way. See: Chicago. Star casting refers to a "name" in a role they do quite well in. See: Reba McEntire in Annie Get Your Gun.

Stunt casting is not defined by talent or how well someone does in a role, though. It's just the casting of a celebrity or well known actor in favor of someone from the typical acting pool, in order to gain publicity. In this context, casting Carly and Keke as Cinderella in favor of a Broadway actress.
Good stunt casting is still stunt casting.
