I've seen Cabaret, Spider Woman, Scottsboro Boys and Chicago. What else should I be familiar with?
I personally love THE RINK.
Even their "lesser" shows have something to recommend.
I think their last truly great dramatic work is THE VISIT. A brilliant blend of German tragi-comedy and Broadway verve.
There are taboo recordings easily found from the two major productions.
The other show I'd next explore is Z0RBA. Flawed yes, but a top notch K&E score. THE BUTTERFLY and WHY CAN'T I SPEAK are personal favorites.

I honestly recommend checking out Steel Pier. The show itself has flaws but it's a beautiful score.
No harm in checking out Curtains, even though it's not one of their best. It seems like you've got those covered, though. :)
I love ZORBA, but if you buy a cast recording, be sure to go on Ebay and grab the vinyl or a cassette of the original with Hershel Bernardi and not the Anthony Quinn version.
EDIT: Never mind, itunes store has the original for download.
Zorba, and the Rink
The Act. Especially Arthur in the Afternoon. Hilarious.
And the World Goes Round.
It their "Best Of..." compilation show.
I love THE RINK and CURTAINS.
Honestly, anything! You can't really go wrong, when looking at each show individually. There is something you will probably like in each. Its interesting with Kander and Ebb to look at the shows done before and after their "big" hits, and see the growth.
I love "Curtains". One of my favourite shows. Another favourite is the interesting score written for "Funny Lady", and "Flora, The Red Menace".

allofmylife, I love arthur in the afternoon, but I never understood what is his job, There is no reference that I find, and I keep going to dirty places in my mind when I think of it:)
Woman of the Year
Flora's a wonderful score too. There are three clunkers, but other than that, it's musical comedy heaven.
And I'll agree with PJ, that The World Goes Round is terrific.
Steel Pier has a lot of problems, but the score isn't one of them. It's much more "Warner Brothers Cartoon"-sounding than, say, Chicago or Cabaret, but it's still very, very good.

kander and Ebb are brilliant. I second the notion that anything they have written should be studied even "the Happy time" and " The Visit". They are brilliant in their apparent simplicity.
The lyrics combined with the haunting music is just incredible.

ZORBA with Bernardi is a treat.
the rink
Two terrific scores: FLORA, THE RED MENACE and THE HAPPY TIME
I agree that all of them are worth a listen, but The Act has one of my favorite and most-played cast recordings ever. Liza is in rare form from start to finish.
The Rink, The Happy Time and Steel Pier are also must hear scores.
Good call, Almira! I saw THE VISIT twice, and I love the score. How I wish we had a professional, studio recording of it. I also love ZORBA, and I will never forget the haunting death of Lila Kedrova's character, along with the brutal stabbing of the Widow, in the revival (which I saw on tour). What a great show!
I know people don't like the Quinn Zorba as much, but honestly, for me it's worth it for Robert Westenberg - he sounds GREAT on that recording.
I used to live by the 70, Girls, 70 Broadway recording. I need to pull it out. I also recommend The Rink (OBC), Flora (OBC), and The Act which all play better on disc than they did on stage. All of them are worth visiting though. I also love their songs for Funny Lady and happen to think they're quite wonderful.
