Good morning everyone.
Mmm Banana's Foster.
The last hour of 'Today' is tape delayed here, so Regis and Kelly can appear live. So I'll grab a pen and be ready for scampi.

Hi, bway11 - and hello, KMF
Joey that made me laugh out loud and embarrass myself again!!
Mornin' BT11!
Hi ck and BT11.
ck, I didn't have my volume on, so I just assumed it was scampi from the ingredients. It might be something different. There were some delicious looking sides, as well.
Well, I'm headed off to meetings for the morning then I'm taking the afternoon off... Have a great day everyone and don't get in too much trouble! (HAH... )

Morning.
Scampi is a tough one, because so many people are iffy on heavy garlic. I love to use lots of garlic, but in subtle ways. :)
How is everyone doing?
Addy, have you wrapped your packages yet?
Hi Matt.
Bye, Pip. Have a good weekend!
Hey, Joey! How's life treating you?
CK -- scampi is very very easy....
2 shallots minced
2 - 3 garlic cloves minced
2 TBS butter
2 TBS oilve oil (EV)
Sautee the above until tranlucent
Add a pound of peeled/deveined shrimp
Suatee until just pink (about 3 minutes)
Transfer to a warm covered disg
Return pan to flame -- add a 1/2 cup of good dry white wine (I like Fume Blanc for this or Pinot Grigio (NO COMMENTS) and juice of one lemon
Add 2 more tbs butter and oil, melt and incorporate
Return shrimp to pan, heat through
Add fresh parsley (chopped)
Serve!

Hello Matt.
So ya, my friend from CCM is in town, so we are chatting. I am having fun.
How about a nice blush, or a white zinfandel perhaps K? teehehehe
CK -- get out of my kitchen....NOW!
Addy -- I hope you take no offense...those PINK drinks should be banned for life...sorry to all you WZ drinkers
no argument here, K.
ck - Shrimp scampi is a frequent request of friends when I have them over for dinner. I have a fool-proof recipe. But, I know what you mean about the garlic.
Scampi really is a great entertaining recipie....for some reason it has a certain "wow" factor and is just so easy and you are not a slave to the kitchen....
The shallots are what I like most and does help "cut" the garlic...I have made it with all shallots and it also tastes fine...
THe main rule -- do not over cook the shrimp!
I'm groggy today. Someone slap me.
