ck, I didn't have my volume on, so I just assumed it was scampi from the ingredients. It might be something different. There were some delicious looking sides, as well.

Scampi is a tough one, because so many people are iffy on heavy garlic. I love to use lots of garlic, but in subtle ways. :)
How is everyone doing?

CK -- scampi is very very easy....
2 shallots minced
2 - 3 garlic cloves minced
2 TBS butter
2 TBS oilve oil (EV)
Sautee the above until tranlucent
Add a pound of peeled/deveined shrimp
Suatee until just pink (about 3 minutes)
Transfer to a warm covered disg
Return pan to flame -- add a 1/2 cup of good dry white wine (I like Fume Blanc for this or Pinot Grigio (NO COMMENTS) and juice of one lemon
Add 2 more tbs butter and oil, melt and incorporate
Return shrimp to pan, heat through
Add fresh parsley (chopped)
Serve!

ck - Shrimp scampi is a frequent request of friends when I have them over for dinner. I have a fool-proof recipe. But, I know what you mean about the garlic.

Scampi really is a great entertaining recipie....for some reason it has a certain "wow" factor and is just so easy and you are not a slave to the kitchen....
The shallots are what I like most and does help "cut" the garlic...I have made it with all shallots and it also tastes fine...
THe main rule -- do not over cook the shrimp!
