My faves are:
Glory (the dance section in the middle, ok, that's an electric piano, but that still counts) - Pippin
Magic to Do - Pippin
Almost ALL of Rent
Dance with the Devil - Witches of Eastwick
Got any others?

Jason Robert Brown does a great solo in the middle of "Moving Too Fast" in THE LAST FIVE YEARS. Unfortunately, the printed score doesn't notate it - it just says "ad lib".

Basically any JRB song. Haha.
Have to agree with Jon. "Moving Too Fast" made me fall in love with Jason Robert Brown's music. In the show, it's not so much a piano solo since there is dialogue over it. All of JRB's playing on the Last 5 Years demo is insanely good.
I can't really think of any other piano solos in shows.

I loved when Harry Connick Jr. played the piano in the Pajama Game revival at the Roundabout.
I don't know if they count as solos, but any of those moments in Ragtime where the piano had a couple of seconds to shine.

I allso like to hear all the piano parts in Mary Poppins.
All of the solo bits in tick, tick...BOOM!

The piano intro for "It won't be long now" in "In the Heights" is pretty much the only part of that show I really really liked (but I know I'm in the minority ...)
The rest of the show is a bit meh for me.

I'd have to agree with the MARY POPPINS piano solos. Listen to the massive piano duet in "Anything Can Happen"!
I also agree with the piano solos in RAGTIME as well as EASTWICK and CURTAINS. Maybe it's me but William David Brohn really knows how to write for piano. And he was a BASSIST. It's no surprise that his mentor was one of the best... ROBERT RUSSELL BENNETT!

DANG... how could I forget about BARNUM!!!
The two-piano spotlights in "Come Follow the Band" and "Thank God I'm Old" kill me every time. I always love playing that part so much, and it gives me a charge.
The piano score for "Secret Garden" by Lucy Simon is brilliant.

Movin' Out!
Seriously, though, Ragtime takes the cake.
