The two part deliciousness that was WHO SHOT MR. BURNS will probably be my pick as one of the best of the entire series.
I don't know episode titles, but the two that come immediately to mind are the one where Bart sells his soul to Milhouse, and the one where Lisa helps Homer gamble.
I'm partial to the one parodying Evita.
"Behind the Laughter," the "Pulp Fiction"-like one and the one where Homer gains weight to get on disability are up there.
"And Maggie Makes Three" from season six. It opens with the Knight Rider parody "Knight Boat" then goes through telling the origin of Maggie and how absolutely perfect their lives were before Marge got pregnant a third time.
Just a complete grand slam of an episode.

I am the ultimate Simpsons fan. It was once the most original parody on television.
I'm partial to a number of episodes from the show's heyday (from the beginning to the Behind the Music episode).

i don't watch it that much (i'm a Family Guy person) but i'm quite partial to the one a couple weeks ago with Steven Sondheim... ^_^

Another vote for "A Streetcar Named Marge". It has all the humour and writing that made a classic Simpsons episode... classic.
I'll also add "Cape Feare", for the Sideshow Bob-hitting-the-rakes bit.
Every time I'm in the kitchen, with a knife aimed at some veggies, or I'm going to carve up a meatloaf, the line, "This won't hurt a bit, until I jam this down your throat!" comes to mind.
I remember a scary dentist says it to one of the Simpson kids. Maybe Bart?

wonderfulwizard11 - back in the day, there were about 20/25 really great episodes per season. That was the year of the monorail, whacking day, etc.
Now, there are about 2/25 per season that make me laugh.
It really has experienced a decrease in quality.
I just wish Fox would air old episodes rather than the terrible new ones....you know, the ones where Homer was genuinely stupid and not a retard?
I love the monorail one. Anytime we are in a monorail, I bust out with "monorail, monorail, monorail..." and then my boyfriend pretends he doesn't notice me.
I am fond of the Frank Grimes episode too. Don't really know why. I agree with Yankeefan and enjoy the episodes where Homer Simpson (local boob) was stupid, not retarded.
"The Cartridge Family" ...remember?
It was season nine, and I don't tend to like episodes that late, but it was so great. The first act just makes fun of how dumb and boring soccer is, which I love. (I mean I love making fun of soccer. I don't love soccer.) And the rest is a great episode about the family and an hilarious commentary on gun laws/gun ownership/the second amendment, etc.
I love the one where they buy the horse from the fair and Homer gets sucked underground by the elf people. I haven't seen that one in a *long* time.
My favorite episode was always Boy Scoutz in the Hood - the one where Bart became a junior camper. It always seems to get left off of "Best" lists but it is a CLASSIC -- best opening sequence of any episode - Homer with the peanut, talking to his brain, Bart and Millhouse on the Squishee bender,that great line about weasels: "Weasling out of things is what separates us from the rest of the animals...except the weasel"...the thing with how everyone enjoys knives to Ernest Borgnine leading the Boy Scouts - just a fantastic episode all around!
