In all seriousness...Sara Ramirez as Ursula.
I feel her "Poor Unfortunate Souls" would be A-M-A-Z-I-N-G!
Plus, she could wear makeup and prosthetics to make her look like an older woman...and then she can make the transition to the veluptuous brunette when Ursula takes human form.

i can see foanatic's point about sara ramirez....the switch would be a hell of a lot easier if ursula was really a voluptuous brunette. i mean, it would just work so much better if you knew it was the same person (ie sara ramirez as ursula/land ursula) than having two different people playing land/sea ursula.
all that said, harvey WOULD be amazing...but we have to think about logistics, here.

I'm so tired of hearing Harvey as Ursula. If he hadn't been in Hairspray, nobody would probably have thought of him. If you guys have heard the demo recording, Ursula is a pretty difficult singing role, and having Harvey growl his way through the show would suck. I know that he may LOOK the part, but I honestly would be dissapointed if he was cast. Not that I think he will be. Disney's probably too conservative to have crossdressers.
Anyways, I think Sara Ramirez's voice would be perfect for Ursula, especially based on the new songs she's supposed to sing. Kerry Butler didn't impress me, and I'd like to see somebody different for the role. Perhaps Sutton? I don't know. This would be a great opportunity for a newcomer. I'm not sure what her name is (I wanna say Ashley Brown), but whoever is playing Belle on Broadway right now would be incredible based on her performance on the video alone. I'm sure she's ten times better live.
Gavin Creel was and would be excellent as Eric. I honestly don't think Cheyenne's voice is better than Gavin's. He does look the part more, but I still would rather see Gavin in the role.
