Caitlyn has been taking hormones and the like to transition to female, and she is technically female now. Similarly, Chazz Bono took the necessary hormones and the like to transition to male, and Chazz is technically male now (even though he still has a vagina). By placing your decision to call someone male or female solely on anatomy is (I believe to be) incorrect.
We are all learning so much about this process from this show, and I truly find it fascinating.
If your definition of man is "someone who has a penis" and woman is "someone who has a vagina" then I think you need to alter the way you define men and women because that is clearly not accurate.

female: of or denoting the sex that can bear offspring or produce eggs, distinguished biologically by the production of gametes (ova) that can be fertilized by male gametes.
So, by your limited definition, are sterile men still men? Barren women? Women without reproductive organs? Basically, you're only a man or a woman if you can beget a child?
