The hot mustard I always get tastes like as_s. Soy sauce.

What's hot mustard?? Is that really a Chinese thing? Is that the bright red thick spicy sauce? If so, it goes GREAT on Chinese dim sum (esp. shrimp dumplings - "har gow", and pork/beef dumplings - "siew mie").
Otherwise I would choose soy sauce - it's very versatile. You can use it on its own, you can use it in addition to other sauces, it goes great on anything (veggies, meats, rice, etc.)....*drools* *wanders to fridge*

I loooove seet and sour sauce over pork dumplings. Gorgeous. Otherwise Soy sauce. Not that I've tried duck sauce, is it actually made out of duck?

No, chinese hot mustard is yellow and liquid - it's essentially mustad powder mixed with water. If you use too much it will make your eyes water. It is most commonly served with egg rolls.
No, duck sauce is not made OF duck. It's the sauce you put ON duck. Sometimes it's just called sweet and sour sauce. It is usually made from apricots.
No one has mentioned hoisin sauce, the thick sangy sauce that goes on mushu dishes. It is made from plums, among other things.
Out of those three, I like duck Sauce. But my favorite chinese dipping sauce is this chinese hot oil. It goes good with anything.

Soy sauce mixed with a little sesame oil, garlic and fresh ginger.
One part hot mustard, two parts duck sauce on crispy foods. Soy sauce on almost all soft foods - including soup. Exception is Moo-shi pork that must have plum sauce.
