This reminds me of a cookbook I got from the Williamstown Theatre Festival. This recipe is "Joan Van Ark's Baked Potatoes"
2 Baking potatoes
1 Microwave oven
Wash 2 medium baking potatoes and pierce with a fork. Place in a microwave oven. Bake for 7 minutes on high. Remove from microwave and serve piping hot. Serves 2.
Face it - theatre folk and their fans just aren't great cooks!
A click for life.

Well...it's fast if you've made the turkey loin the night before. It's easy though.
On a whole wheat tortilla, spread about 1 Tbsp of Low-Fat Ranch dressing (blue cheese is good too, although not as healthy,) next add some thin (or medium) slices of rotisserie flavored turkey tenderloin, then top with lettuce and tomato.
Then wrap it up and eat. One of the easiest and tastiest things I've had in a long time. A lot of restaurants sell them too, but this way you know what's going in and you get the tastiness of the marinade.

2-4 breasts of chicken, cut it up, put in cassarole dish.
Pour one bottle of italian dressing over it.
Attack chicken vigoursly with a fork, stab, stab, stab to get dreesing to seep into chicken. (especially nice when you are angry)
Marinade as long as possible.
Cook at 350 for 50 minutes, and you'll have some of the best damn chicken you've ever had.

2-4 chicken breasts throw into crock-pot (for some odd reason works better if they are frozen)
in a bowl mic one can of cream of mushroom sour, and one can golden mushroom soup, and whatever amount of tarragon you like (I like a lot).
Pour over chicken, cook for 8 hrs, serve over rice.
DO NOT......DO NOT use rosemary if you happen to be out of tarragon and are too lazy to go to the storem, because chance are you will use WAY too much rosemary and it just tastes plain nasty!

I make an excellent baked talapia in a cream sauce with capers, tomatoes, garlic, and onions, but I don't know what the stipulations are for "fast"
easiest thing = pasta with store bought sauce and meatballs. works every time

I have some chicken breasts, and I'm hungry!
How can I cook them and make them flavorful so I'm not eating plain chicken? I'm bored of just onions and garlic.

My favourite thing to do with chicken breasts:
Pound them a bit to make 'em flatter.
Mix the following up and rub all over the pieces of chicken:
2 tsp. olive or cooking oil
2 tsp. curry powder
1 tsp. chili powder
1 tsp. packed brown sugar
1/8 tsp. ground allspice
1/4 tsp. salt
1/4 tsp. pepper
BBQ or broil for about 5 minutes per side. Voila!

Shakshuka
Saute 1 glove minced garlic and 1 large chopped onion in medium, heavy-duty skillet in olive oil over medium till golden. Add 1-2 chopped tomatoes (or you can use a can of diced), and cook for 3-5 minutes. (You can also add chopped pepper at this point). Add a spoonful or two of tomato paste and ~1 cup water. Add salt & pepper to taste. You can also add oregano, paprika, red pepper flake etc. Let cook for another few minutes (5 - 8 minutes) until everything is cooked down and bubbly.
Take 2-4 eggs (I go with 2 per person), and crack them over the sauce, being careful not to break the yolk. Lower heat, cover the pan, and cook for 8-10 minutes, depending on how well you want your eggs cooked. Serve with a good crusty bread.
It's an Israeli/Moroccan specialty, it's yummy, it looks fancy, and it's so easy to make!

This is one of my favorites:
-Throw some fresh asparagus in a steamer for about 13 minutes
-Take 2 salmon filets (cut the skin off)
-Place them in a large skillet.
-Pour about 1.5/2 cups of white cooking wine over them
-Fill the rest of the skillet with water until the top of the fish is barely covered
-Cook on medium heat until the water boils
-Upon boiling, reduce to a simmer, flip fish, and cook for 5 minutes more.
While the boiling is happening....
Mix lemon juice, capers, rosemary, basil, thyme, and low-fat sour cream in a mixing bowl. (There are exact measurements, but I always do it by sight.)
Remove salmon, serve with asparagus. Lightly dress salmon with the caper dressing.
It's AMAZING.

Posted: 5/16/07 at 7:09pmI adore shake-and-bake tofu. Just cut a block of (patted dry) tofu into small strips, toss it in a baggie with some wheat germ and shake it up until the strips are coated. Then bake it for 30 minutes or so. Serve it with marinara and a side salad.
