It's the ice cream that made Effie fat and thereby not allowing her to be loved by Curtis OR herself, so the knocking over of the ice cream is very symbolic of a new beginning for her.

I know...she seems so sad that the Elphaba Pony is going away. She evokes waaaaaay more emotion than Kristin Chenoweth ever did.
