Carousel's a personal favorite. I have to agree that King and I is more fool-proof, but I don't care for it tremendously.

THE KING AND I, definitely. Great book, great score. Paved the way for THE SOUND OF MUSIC.
Score - CAROUSEL - impossibly beautiful melodies
Show - SOUTH PACIFIC - so much fun, when done well.
Film - THE SOUND OF MUSIC (FLOWER DRUM SONG, runner-up) - TSOM, improved upon its source material, in every possible way. And, the cast and location cannot be beat.

The King & I is my favorite, though I really love most of their shows. It was also my first Broadway show:)
I wish R&H shows weren't so long... because there are some that I really enjoy but get so turned off by the length. Like I really like Oklahoma and Carousel and King and I... but they are all so hard to sit through!
I would have to say "Carousel," followed closely by "South Pacific." I don't like the stage version of "The Sound of Music" but enjoy the film--it is one of those rare instances where a film version improves upon the stage version.

The King & I is probably Rodgers and Hammerstein at their very best. I believe "Shall I Tell You What I Think Of You?" is one of the best musical soliloquies in the history of musical theater, "Shall We Dance?" has to be the best song about unspoken love, it is so layered and well-written. I believe they only came close to the brilliance of that show with Carousel, another masterpiece.
One of the wonders of R&H musicals is that one can play the cast recordings over and over and not get tired of them.
I must be the only person on the planet who has not seen the movie of "The Sound of Music" but I did see the original Broadway Cast of that show with Mary Martin and Theodore Bikel and loved it.I also saw and loved the OBC of "Flower Drum Song".The Lincoln Center production of "Carousel" with Michael Hayden (what ever happened to him; he was great) and Audra McDonald was wonderful and I guess "Carousel" is my favorite.

Since seeing the Hytner production back in '94, Carousel has been my favorite. It's blasphemy to say it, but while I respect most of the others and they all have their moments, I find myself getting a bit bored seeing them in most productions. Without a great director, they all seem to draaaaaaag on interminably.

If you haven't heard or read these shows, you should. I have reason to believe that Me and Juliet will be included on the Encores! schedule for 2008 or 2009.
Carousel is one of the greatest musicals ever written and their best work.
However, I'm partial to South Pacific and Allegro as well.
