Generally speaking, I believe they only cancel if they don’t have enough swings/understudies/stand-bys to cover for those who test positive.
from watching this- it seems like some shows are continuing with positive cases, they are having to cancel once they arn't able to provide coverage. but other shows are pulling the ripcord with just a case or two, "out of an abundance of caution."
its a free for all. every show is testing differently, and every show is responding to positive differently.

A Chorus Line revival played its final Broadway performance on August 17, 2008. The tour played its final performance on August 21, 2011. A new non-equity tour started in October 2012 played its final performance on March 23, 2013. Another non-equity tour launched on January 20, 2018. The tour ended its US run in Kansas City and then toured throughout Japan August & September 2018.

More or less the shows that have cancelled for a week or longer are being cautious through the holidays. They could possibly do shows this week but are playing it safe by not risking the cast and crew to exposure during this (busy) week.

Flying Over Sunset would be closing early as well; it is only set to run through February 6 as of right now.

Frankly I would be shocked and appalled (and heartbroken) if Hadestown announced closure. Any of the others wouldn’t surprise me (as) much although I’m much less familiar with them. Waitress is set to close in early January anyway, plus they had a successful almost 4 year run pre-pandemic. I never saw HPCC but not sure how the reviews/sales are now that they reworked it to one part instead of a 2-part (and inevitably cut some material in the process). I’ve heard mixed things on Doubtfire and Flying Over Sunset but overall not overwhelming positive. But I’ve heard next to no red flags for Hadestown (other than a few cast members testing positive, as has been the case in several shows) until this thread that is. I realize it’s no Hamilton or Wicked and in comparison to shows like those is relatively new, but it’s always struck me as being quite successful.
