Not sure if there was ever any weight to the Hathaway rumor, but there's no reason she couldn't have her child and do the production in the spring. Amber Gray did the London production of HADESTOWN very soon after giving birth.

I haven't followed this production closely enough to remember what roles had been gender-swapped, so I'm a little sad that Amy is one of them, as lately I've been imagining both Kaitlin Olson or Riki Lindhome in that role. They both have the right blend of neuroticism and charisma to really nail it (though I'm sure neither would have been on casting's radar even if the role still was Amy).

Clearly Jane Houdyshell is playing Bobbie. I mean, she already played a 9 year old only ten years ago in Coraline, so a 35 year old will be a walk in the park for her.
I would think Mendez and Miles' participation in CBS' upcoming ALL RISE rules them out. Possibly the same thing with Goldsberry and Netflix's ALTERED CARBON.
Out of this group, Ruthie Ann Miles would be my pick!

I don’t know about regional theatre and TV/film necessarily, but here are some male actors who were last on Broadway in 2014:
Colin Donnell (last on Broadway in Violet) Jake Epstein (last on Broadway in Beautiful) Anthony Rapp (last in If/Then) Bill Heck (Cabaret) Alex Sharp (Curious incident) - can he sing? Maybe too young Ryan Silverman (Side Show)
Zach Braff was last in Bullets Over Broadway in 2014, but he’s more of a TV/film name.
Taking age into consideration, Ali Stoker, Lindsay Mendez, Katrina Lenk, Jessie Mueller, and Celia Keenan-Bolger seem the most likely of the Tony Winners for Bobbie
